The modifications made to starch need to be monitored and characterized. The RVA can be used to identify different types of starch modification and to quantify the extent of modifications, either in-process or as a quality assurance tool. The RVA can be used for quality control of the starch modification process, to predict results that have historically been obtained from fluidity and other test methods.

The RVA is less expensive, less costly in terms of technician time, free from erroneous results caused by uncalibrated equipment and operator variability and provides fast analytical response times. Implementing RVA testing in-process puts delivery of test results in phase with production, enabling the quality of large batches of product to be secured.
